A delicate, flaky confection created from thin, crispy crepes that have been caramelized to perfection. Its texture is distinctively crisp, adding a delightful crunch to any dessert. With a subtly sweet and toasty flavor profile, feuilletine can add both complexity and texture to dishes, transforming them into something extraordinarily captivating.

Ingredients

  • 100g egg whites
  • 100g melted unsalted butter (cooled to room temperature )
  • 100g powdered sugar
  • 100g all-purpose flour
  • 1 tsp. Vanilla extract

Instructions

  • Step 1: Melt the Butter
    Start by melting the butter in a saucepan over low heat. Once the butter is completely melted, remove the saucepan from the heat, let it cool slightly, and mix it with egg whites.
  • Step 2: Add Flour and Sugar
    Gradually add the sifted flour and powdered sugar to the egg whites and melted butter, and whisk well to combine.
  • Step 3: Spread the Batter
    Line a baking sheet with parchment paper.
    Spread the batter thinly and evenly onto the parchment paper using a spatula or the back of a spoon.
  • Step 4: Bake
    Preheat your oven to 350°F (180°C). Place the baking sheet with the batter in the preheated oven and bake for about 8-10 minutes, or until the feuilletine turns golden brown and crispy.
  • Step 5: Cool and Break Into Pieces
    Remove the feuilletine from the oven and let it cool completely on the baking sheet. Once it's completely cooled, break it into small pieces using your hands or a knife.
