Croustillant. For this you’ll need equal parts of melted chocolate, Feuilletine and Hazelnut Praline Paste. Get the recipes below:

PREPARATION:

Combine melted dark or milk chocolate, feuilletine and hazelnut praline paste.

Be careful not to overmix.

Chocolate Creméux

Ingredients:
128 g or 3/4 cup milk chocolate chips
128g or 3/4 cup Dark chocolate chips
90g or 4 tbsp. Powdered sugar
240g or 1 cup Whole milk
4pcs. Egg yolks

  1. Prepare the Chocolate Creméux: In a bowl, whisk the egg yolks and powdered sugar until well combined. Warm the milk in a pot over medium heat – it doesn’t need to boil, just be warm. Slowly pour the warm milk into the egg yolk mixture while constantly whisking to prevent the egg from curdling.
  2. Return the mixture to the pot and place over low heat. Cook for a few more minutes, stirring with a spatula, and making sure to scrape down the sides of the pot.
  3. Check for readiness by dipping a spatula into the mixture and running your finger over it (careful, it may be hot). If the line you make holds without running back, the mixture is ready. If not, continue cooking for a bit longer.
  4. Place the milk chocolate chips and dark chocolate chips in a separate bowl and set a strainer on top. Pour the egg yolk mixture into the bowl with the chocolate chips, straining out any lumps from the egg mixture. Let the mixture cool at room temperature, covered, for about 15-20 minutes.

 

Vanilla Chantilly

Ingredients:

3/4 cup heavy whipping cream (35% Fat)
3 tbsp. powdered sugar

PREPARATION:

Whip the heavy cream and powdered sugar together until it forms soft peaks. Be careful not to over-whip.

Assemble the Tarts:

To assemble the tart, start by placing about a teaspoon of croustillant in each tart shell and gently spreading it with a spoon. Then, fill the tarts with chocolate crémeux. For the chantilly cream, simply whip 3/4 cup of heavy whipping cream (35% fat) with 3 tbsp. of powdered sugar. Pipe the chantilly cream over the tarts and decorate according to your liking. Optional decorations can include cutting out chocolate pâte sucrée circles using a piping tip, refrigerating them to set, and then placing them on a baking sheet lined with parchment paper. Add another parchment paper and a baking pan on top and bake at 338°F (170°C) for 10 minutes. Let them cool and then place them on top of the chantilly cream. You can also add some hazelnuts and pipe small dots of praline paste and chocolate crémeux to add more definition to the tart.
