This fluffy, delicious delight is truly enjoyable and I’m here to show you how to make it just right and use it easily in your tasty desserts. So, let’s get started and learn how to make perfect whipped vanilla ganache together!

Vanilla Whipped Ganache: A Heavenly Blend of Flavors and Textures

This foolproof whipped vanilla ganache is a fluffy and delightful treat that I’ve put together using simple ingredients like heavy whipping cream, white chocolate, and a touch of vanilla extract. By adding gelatin to the mix, I’ve created a light and stable texture that works well in a variety of desserts—using an immersion blender to make it even silky and smooth! This lovely whipped vanilla ganache is an easy and approachable way to enhance the flavor and presentation of cakes, pastries, and many other sweet treats.

Ingredients:

  • warm heavy whipping cream
  • cold heavy whipping cream
  • white chocolate chips
  • 200 bloom gelatin powder
  • vanilla extract

Understanding Bloom Strengths of Gelatin:

Before we dive into the recipe, let’s talk about gelatin bloom strengths. Gelatin is a key ingredient in many recipes, providing structure and stability. The term “bloom strength” refers to the gelling power of the gelatin. The higher the bloom strength, the stronger and firmer the gel will be.

Bloom strengths range from 30 to 300, with higher numbers indicating a stronger gel. For our vanilla whipped ganache, we’ll be using 200 bloom gelatin, which strikes a perfect balance between firmness and creaminess. If you’re using a different bloom strength gelatin, you’ll need to adjust the amount accordingly. A quick rule of thumb: divide the desired bloom strength by the bloom strength of the gelatin you have, then multiply the result by the amount of gelatin called for in the recipe.

Now, let’s get to the recipe!

Vanilla Whipped Ganache Recipe:

  • In a small bowl, combine gelatin with cold water. Allow the gelatin to bloom for about 5 minutes.
  • In a saucepan, heat the 250g heavy whipping cream until it reaches a gentle simmer.
  • In a tall glass or container, place white chocolate chips/ chunks, vanilla extract, and the bloomed gelatin, pour in warm heavy whipping cream and let it sit for 2-3 minutes. Stir until fully dissolved.
  • Use an immersion blender to make an even smoother consistency. While blending pour in the cold cream.
  • Keep blending until fully combined.
  • Transfer to a container and cover it with plastic wrap, making sure that the plastic touches the surface of the mixture to prevent it from forming a skin.
  • Refrigerate for 6 hrs, preferably overnight.
  • Once chilled, transfer it to a mixing bowl and whip it using an electric beater until you reach the desired consistency.
  • Now ready to use for various dessert applications!

Delicious Ways to Use Vanilla Whipped Ganache:

Now that you’ve mastered the art of making vanilla whipped ganache, let’s explore some classic French desserts that can be elevated with this luxurious ingredient:

  1. Mille-Feuille: Add a touch of elegance to this classic French pastry by spreading a layer of vanilla whipped ganache between the crispy puff pastry layers along with the traditional pastry cream. The combination of textures will create an unforgettable dessert experience.
  2. Éclairs: Fill your éclairs with vanilla whipped ganache instead of the traditional pastry cream for a lighter, more delicate flavor. Top with a thin layer of white chocolate glaze for a stunning visual effect.
  3. Charlotte: Use vanilla whipped ganache as an alternative to Bavarian cream when constructing a Charlotte cake. The whipped ganache will provide a beautiful contrast with the ladyfinger cookies that encircle the dessert.
  4. Paris-Brest: This iconic French pastry, traditionally filled with praline-flavored cream, can be taken to new heights by incorporating vanilla whipped ganache. The velvety texture and subtle vanilla flavor will pair perfectly with the crunchy choux pastry and nutty praline topping.
  5. Tarte Tatin: Serve a slice of warm tarte tatin with a generous dollop of vanilla whipped ganache on the side. The ganache will melt slightly, creating a luscious, creamy sauce that complements the caramelized apples beautifully.
  6. Floating Island (Île Flottante): Add a contemporary twist to this classic dessert by serving your poached meringue atop a pool of vanilla whipped ganache. The combination of the light, airy meringue and the rich, creamy ganache creates a harmonious balance of flavors and textures.

And that’s a wrap, everyone! Whipped vanilla ganache is a tasty topping for many desserts. As a former chef, I’m so happy to share my knowledge and excitement with you all, and I hope this guide motivates you to use this wonderful treat in your own dessert-making. Keep in mind, the key to doing well in the kitchen is to have fun and let your imagination run wild. Enjoy your treats!
