Fall is here! What better way to enjoy this season than making Fall Desserts? I mean, caramel, pecan, pumpkin, cinnamon, and apples? C’mon! These are the taste of Fall!
But today I’d like to share with you a Fall recipe with a well-known ingredient combo — Apples and Cinnamon. I don’t know about you, but there’s something in the way the apple and cinnamon smell that wakes up my senses in the transitioning weather from summer to fall. I love the way the smell lingers in my entire home when I bake it.
This recipe that I’m about to share is super easy to make, all you need is some apples, cinnamon, butter, and pastry puffs for the dough. Yep! You don’t need to make the dough from scratch! How easy is that!
These flaky buttery pastries with lightly spiced luscious apple filling will send you to the moon as you eat them, especially when topped with vanilla ice cream, caramel, and nuts! Perfectly paired with a hot cup of tea, it will make you feel in the mood to cuddle yourself up on the couch with a good book to read!
INGREDIENTS:
You only need a few ingredients. Some of them are already in your pantry.
Puff Pastry Squares- I use the square version than the big ones. It’s easy to use and you don’t need to cut them. Make sure they’re thawed before using. I’d like to put them at room temperature for 10 mins. before I use them.
Apples- You can use your preferred ones. Granny Smiths provides tartiness and a lot of texture, Honey Crisps for honey-ish flavor with a crispier bite, and so on. I’m using Gala since I have a lot sitting on my counter plus it also has a good mild flavor with hints of vanilla.
Butter– Use unsalted butter to control the overall flavor.
Sugar- I use dark brown sugar. You can also use soft brown sugar if you like. I just like the taste of dark brown sugar more in this recipe. The flavor is more elevated especially when mixed with butter. It gives the pie filling a deeper caramel-ish flavor.
Cinnamon- Use a powdered one. Any brand will do.
Salt and lemon- To dial down the sweetness from sugar and apples.
Water- To give moisture
Milk and melted butter- For brushing. Also they give hydration to the pies as they will dry up in the oven while baking.

Mini Apple Pie Puffs
Ingredients
- 2 pcs. apples (peeled, scored and diced)
- 6 pcs. puff pastry squares (room temperature)
- 2 tbsp. or 28 grams unsalted butter (diced)
- 4 tbsp. or 50 grams dark brown sugar
- 1 tbsp. or 3 grams cinnamon powder
- 3/4 cups or 180 grams water
- 1/2 pc or 1 tbsp. lemon juice
- 1 pc. apple (thinly sliced)
- 1 tbsp. or 14 grams unsalted butter (melted)
- 1 tbsp. or 15 grams milk
Instructions
- Bring diced apples, brown sugar, unsalted butter, water, salt, lemon juice, and cinnamon powder to a boil. Remove from the heat and let it cool completely. Transfer to a bowl, cover, and refrigerate for at least an hour.
- Thaw pastry puffs. Take one and cut a square hole in the middle and place it on the top of another pastry puff. Pinch the edges using a fork.
- Add the apple filling in the center.
- Place thinly sliced apples on top of the filling.
- Brush with melted butter and milk to avoid drying up in the oven while baking.
- Bake in a preheated oven at 200’C for 10 mins. (+/-)
- Let it cool before serving. Optional: serve it with ice cream, caramel sauce, and pecan nuts.
